This week’s Hospo Hero’s features Shaun de Vries, the Founder and Director of Open Pantry Co.

Shaun has been an industry leader in Melbourne’s hospitality industry for over 20 years. Shaun has been a venue owner himself; he knows the commitment, effort and experience required to develop a concept into an award-winning, and profitable venture.  

Shaun hosts the Open Pantry Co. Podcast an initiative set up in 2018, to give hospitality leaders a voice on an international platform. The insights shared by Shaun’s network of hospitality pros have helped thousands of people in the industry. With over 80 episodes so far, Shaun has interviewed big names such food writer Kara Irving, Nick Stone from Bluestone Lane Coffee, Mark Wright from Wham Consulting and hospitality expert, Frank Widen.  

We had the chance to ask Shaun a few questions and here is what he had to say……

During such uncertain and changing times Shaun has decided to work on his baking and coffee skills, baking a sourdough each weekend with his partner deciding to pick up a course at university, which he finds himself reading over data science and business analysis.

The future of the industry is looking dire and as Shaun and many others predict there will be mass closure, especially after job keeper finishes. Shaun believes that we will have a lot more elevated hospitality experiences and specific sectors who don’t provide value to guests wont survive.

However Shaun predicts there is some hope for the future, “I believe the industry will move and shake in many different ways over the next 2-3 years.  Ways in which we have never seen and we’re likely never to see again.  In this article I wanted to outline my thoughts on what I believe needs to change over the course of the next 5 years in order for the hospitality industry to survive, stabilize and flourish.”
